Melons are delicious on their own, but for a refreshing alternative, try melon smash. A yummy combination of melon with lemon juice, mint, and olive oil.
Ideal for hot summer days, melon smash makes a sweet, light, and refreshing dessert.
Preparation time is very quick. Simply chop the ingredients and blend together. It will need at least one hour to chill in the fridge.

Chop off both ends of a melon to make it easier to prepare, and slice it into wedges. Carefully remove the seeds and discard. The dessert is made from the soft flesh, which needs to be cut away from the tough outer skin. The skin is good for compost. Next, chop the melon flesh into chunks just over a centimetre or half an inch wide.
In a bowl, add two tablespoons of olive oil and a sprinkling of salt, and squeeze into this the juice of one lemon, being careful to remove any lemon seeds that may accidentally fall in.
Rip up some mint leaves and add to the juice. The mint should be washed and chopped, using the leaves rather than any chewy stalks.
Now all the ingredients are prepared, they should be combined together in a blender or chopper. A quick blast should be all that is required – but check that the mixture is smooth, and if not, mix the ingredients by hand before giving another blitz.
The melon smash is best chilled before serving. Place in the fridge for at least an hour or store for up to a couple of days.
When serving, garnish with mint leaves.
